I grew up with my grandfather telling me, “Eat to live, do not live to eat.” For my fifth-grade science camp, my mother sent me to camp with fermented carrots and daikon, chicken pate, and Vietnamese mayo in a Bánh Mì sandwich. When I took this out of my backpack and unrolled it in front of my friends, they were all disgusted as it smelled like…fart! I went home traumatized and upset with my mother for years, letting her know that I never wanted to bring my favorite sandwiches to school.
Little did I know that those pungent fermented vegetables would later become my passion and profession. What started as childhood embarrassment blossomed into a deep appreciation for the traditional fermentation practices that had been part of my family's culinary heritage for generations. Those early experiences with fermented foods sparked a lifelong journey of exploring the intersection of flavor, tradition, and gut health.
